Ham and Swiss Rolls and Strawberries with Mint

This is one of my “I don’t feel like cooking dinner” dinners.  With finals right around the corner, the kitchen is seeing a lot less of me.  These ham and Swiss rolls make for a quick dinner with simple deli offerings, plus the leftover ones make for a decent toaster oven breakfast the next day.

Ham and Swiss Rolls

1 package refrigerated pizza dough (1 lb)
8 ounces deli ham (or any deli meat of your preference)
4 ounces shredded Swiss cheese (or any cheese of your preference)
1/2 yellow onion, sliced into thin rings

Preheat oven to 400 degrees.

Roll the pizza dough into a large circular shape (like a pizza crust) then cut into 8 “slices.”

Stack ham, onion, and cheese onto each “slice” and roll up the dough around the filling.  Some filling will stick out at the ends.

Transfer rolls to parchment paper lined baking sheet, with the edges of the rolls facing down so the rolls don’t open up (“explode”) in the oven.  Bake until edges are golden brown.

Makes 8 rolls (serves 4)

Strawberries with Mint

Well it drives me crazy to not have any sort of fruit or vegetable with a meal, so this is a easy one I always use if I need a quick side or an easy dessert. 

4 cups fresh strawberries, stems removed and quartered
4 tbsp sugar
A few sprigs of fresh mint, leaves finely chopped

Combine all ingredients in a medium bowl and toss.  Cover and refrigerate for at least 30 minutes before serving (the strawberries need at least 30 minutes to release some of their juices).

Serves 4

For a change of flavor, this recipe also works great with basil in place of the mint.

    how funny… when i started reading this post i thought you were going to mix them all together! a wrap with ham, swiss, strawberries AND mint. they look much better separate 🙂
