Gooseberries

I bought some fresh gooseberries (the sweet, maroon-skinned variety, not the hard green ones) from Central Market this weekend because I have never had them before.  What exactly is the proper procedure for eating these babies?  The flesh of the gooseberry is sweet and squishy while the skin is tart and bitter.  Am I suppose to remove the skin these before eating them?  Anyone have good recipes using gooseberries?

    In England we make Gooseberry Crumble as a dessert. Great with custard. Google the recipe.
