Easy Summer Snack (Edamame Dip)

With the recent tomato salmonella scare, I had to find something else to eat with my tortilla chips.  This easy edamame dip (recipe based on July 2008 Shape magazine version with minor alterations) was a good temporary substitute.

6 oz frozen shelled edamame, thawed
2 tbsp extra virgin olive oil (use the good stuff, since the flavor really comes through in this simple dip)
1 tbsp rice vinegar
1/2 tsp salt
2 tbsp water
1/2 cup chopped fresh parsley leaves

Place all ingredients in food processor and pulse until mostly smooth.  Add more salt or vinegar to taste if necessary.  Serve with pita wedges or tortilla chips.

Serves 3 to 4

    This looks great! Isn’t edamame wonderful stuff? I couldn’t imagine sushi without it!!

    Yeah I really liked how refreshing it was. If I make it again, I might choose to add some kind of pepper to the blend since I like spicy food. Then again, jalapenos are out of the question for now… hehe.

    That looks great and pretty easy to make. Looks like its sturdy as well.

    Thanks for this and this is going on my snack list for the summer for sure.

    My gf and I sometimes have “dip nights” for dinner and make 2 or three dips and home made chips and nibble and read, this is for sure a contender for the next one.
