Happy Turkey Day (Herb Stuffing)

It’s the end of Turkey Day as we’re all laying around.  Stuffed, I’m sure.  But I can’t be a food blogger and not post on the best food holiday of the year.  Below is the recipe for easy herb stuffing which was my contribution to the potluck this year.  It’s a little late for this Thanksgiving, but perhaps you can save the recipe for future reference.

Herb Stuffing
(recipe from the November 2007 issue of Real Simple magazine)


1 loaf day old baguette, cut into 1/2 inch pieces
2 tbsp olive oil
1 medium yellow onion, diced
2 medium carrots, sliced
2 stalks celery, sliced
1 tbsp dried parsley
2 tsp dried thyme
2 1/2 cups chicken broth, warmed
salt and pepper

Preheat oven to 400 degrees.

Heat olive oil in a large skillet over medium heat.  Add in onions and cook until brown around the edges, about 6 minutes.  Add in carrots and celery and cook until soft, about 8 more minutes.  Add in 2 tsp salt, 1 tsp black pepper, parsley, and thyme and stir until herbs are well combined. 

In a large mixing bowl, combine bread pieces, cooked vegetables, and chicken broth.  Stir until all components are equally moist.  Transfer to a baking dish and bake for 20 minutes or until heated through.

Serves 6 to 8
