A Star-Studded Lunch (Grilled Chicken with Greek Peasant Salad and Key Lime Pie)

I stole/modified all these recipes from the July 2007 issue of InStyle magazine, which featured a collection of celebs’ favorite recipes.  The combination made for nice, simple, easy summer lunch.

Grilled Chicken with John Stamos’ Marinade and Melina Kanakaredes’ Greek Peasant Salad:

Sara Ramirez’s Key Lime Pie:

Chicken Marinade
(For 1 lb of boneless, skinless chicken breasts)

1/3 cup olive oil
2 tbsp white wine
1 tbsp lemon juice
1 tbsp minced garlic
1 tsp dried oregano
1 tsp salt
freshly ground pepper
cooking spray

Combine all ingredients in jar and shake well to mix.  Pour marinade over chicken in ziplock bag and marinate overnight.

Heat a grill pan coated with cooking spray over medium-high heat.  Grill chicken breasts about 5 minutes on each side, or until no longer pink in center.

Serves 3-4

Greek Peasant Salad

2 tomatoes on the vine, seeded and chopped
1 English cucumber, sliced
1/2 medium onion, finely chopped
a dozen or so pitted kalamata olives
1/4 cup olive oil
1 tbsp lemon juice
2 tsp oregano
1/2 cup crumbled feta cheese
salt and pepper to taste

In a large bowl, combine first 8 ingredients, mixing well.  Add salt and pepper to taste.

Serves 4

Key Lime Pie

1 graham cracker pie crust
4 egg yolks
1-14oz can sweetened condensed milk
1/2 cup lime juice
3/4 cup heavy whipping cream
2 tbsp sugar
1 lime, sliced for garnish

Preheat oven to 350.

Whisk together sweetened condensed milk, egg yolks, and lime juice in a large bowl until color is even throughout.  Pour mixture into graham cracker crust.

Bake for 15 minutes or until filling is set.  Cool on wire rack.  Referigerate for at least 4 hours (prefer overnight). 

In medium mixing bowl, beat whipping cream until frothy.  Add 2 tbsp of sugar and continue beating until stiff peaks form.  Spread whipped cream over pie and top with fresh lime slices.

Serves 6-8

    Sara’s Key Lime pie is the best hands down. There is no comparison or competition to hers! Seriously, if you haven’t already tried it…watch out and be ready for some really amazing pie!
