My Holiday Potluck Default (Buttermilk Pie)

Three things make this pie the greatest holiday potluck default dish:

1. You probably already have all the ingredients except the pie crust and the buttermilk.
2. It is ridiculously easy to make and hard to mess up.
3. It travels well.  The pie can last in a room temperature setting for up to 8 hours.

This custardy sugar cookie is always a crowd pleaser.  The only downside?  This pie will easily bust any diet.  But hey, no one said dessert is suppose to be good for you.


Buttermilk Pie

1 9-inch deep dish pie shell
1/2 cup unsalted butter (or margarine)
1 1/3 cups sugar
2 tbsp flour
3 large eggs
1/2 cup buttermilk (I use low fat in a sad effort to cut down on calories)
1/2 tbsp vanilla extract

Preheat oven to 350.  Melt butter in large microwavable bowl.  Stir in sugar and flour into bowl and mix well.  Beat in eggs one at a time.  Add buttermilk and vanilla.  Mix well and pour into unbaked pie shell.

Bake at 350 for 45 minutes.  Cool before serving.

Serves 8-10.
